Description
There is an opportunity to develop a new solution for a reliable oil-less cooking deep fat fryer (DFF) replacement in the Ohio Replacement (OR) galley design that uses hot air jet impingement technology. The high heat transfer rate of hot air impingement has the potential to produce high volume throughput results with the best quality. Texas Research Institute Austin, Inc., (TRI/Austin) proposes to demonstrate the feasibility of an oil-less DFF replacement cooking appliance for Navy submarines through the use of high speed air impingement heat transfer techniques. TRI/Austin will establish technical feasibility by demonstrating that the oil-less deep fat fryer cooking appliance will meet the operational and environmental requirements. The technical hurdles will be addressed with laboratory environment testing and performance characterization through experimentation. The supportability, safety, and human factors concerns will be addressed along with estimates of size, weight, cost, and performance. The components will be tested to critical submarine vibrations and motion as outlined in MIL-STD-167/1 Type I equipment. A vibration scan will be performed through the frequency ranges at different input levels in all three axes. This will identify problem areas, if any, that will need to be addressed during Phase II.
